Patriotic Blueberry Caprese Salad Kabobs

Ingredients (2-4 servings)

  • 1 pint of blueberries
  • 1 pint of cherry tomatoes (we prefer a small package of Cherubs)
  • ½ – 1 cup fresh mozzarella balls aka “pearls”

Optional

  • ¼ cup fresh basil, thinly sliced
  • Drizzle of olive oil (up to 1/2 Tablespoon)
  • Drizzle of balsamic vinegar (up to 1/2 Tablespoon)
  • Pinch of salt

Directions

The kabobs are super easy, but if you are short on time. Simply combine all the ingredients including the optional ingredients in a bowl. Toss and serve or chill until it is time to serve. Have a party to feed? This is an easy way to feed a crowd just double or triple the recipe as needed. Given the themed colors, this salad is a festive win for Fourth of July—no matter how you serve it.

For the flag display, assemble the kabobs in the following order.

  • 1st: 5 blueberries, 1 mozzarella pearl, 1 cherry tomato, 1 mozzarella pearl, 1 cherry tomato
  • 2nd: 5 blueberries and 1 mozzarella pearl (this one will be short, trim excess kabob stick)
  • 3rd: 5 blueberries, 1 mozzarella pearl, 1 cherry tomato, 1 mozzarella pearl, 1 cherry tomato
  • 4th: 5 blueberries and 1 mozzarella pearl (this one will be short, trim excess kabob stick)
  • 5th: 5 blueberries, 1 mozzarella pearl, 1 cherry tomato, 1 mozzarella pearl, 1 cherry tomato
  • 6th-9th kabobs (4 total): 1 cherry tomato, 1 mozzarella pearl, 1 cherry tomato, 1 mozzarella pearl, 1 cherry tomato, 1 mozzarella pearl, 1 cherry tomato

Tips: Clip all the excess kabob sticks’ length off. The short kabobs nicely fill in the empty spaces next to the longer ones in the blue area.

Optional: Once assembled, drizzle with olive oil and balsamic vinegar, and sprinkle with the chopped basil.
