TORTELLINI, WINTER GREENS AND SAUSAGE SOUP\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/em><\/strong><\/p>\n

\u00a0<\/em><\/strong><\/p>\n

2 TBSP extra virgin olive oil<\/em><\/p>\n

2 to 3 links Chicken Sausage, cooked and sliced<\/em><\/p>\n

1 Small onion, chopped<\/em><\/p>\n

4 cloves garlic, chopped<\/em><\/p>\n

1 \u00bd TBSP fresh thyme, chopped (2 tsp dried thyme is ok if fresh is not\u00a0 available).<\/em><\/p>\n

\u00bd teaspoon crushed red pepper<\/em><\/p>\n

6 Cups chicken broth (packaged low-salt is fine)<\/em><\/p>\n

1 15 oz can diced tomatoes, or 2 cups diced fresh tomatoes<\/em><\/p>\n

4 Cups chopped Swiss chard or other winter green, separate white stems from greens,\u00a0<\/em>dice and reserve.<\/em><\/p>\n

1 – 12 to 15 oz jar of cannellini beans, drained and rinsed<\/em><\/p>\n

9 – 10 oz Cheese Tortellini (ready made is ok)<\/em><\/p>\n

1 Cup grated Parmesan or Romano cheese<\/em><\/p>\n

\u00a0<\/em><\/p>\n

Heat oil in large heavy pot.\u00a0 Add the sausage, onion, garlic, thyme, red pepper and diced chard stems, saut\u00e9 until soft, about 8 minutes. \u00a0Add tomatoes and broth, bring to a boil.\u00a0 Stir in chard, reduce heat and simmer until chard is wilted, about 4 minutes. Add beans and stir.\u00a0 Add tortellini and simmer until tender, about 5 to 7 minutes.\u00a0 That\u2019s it!<\/em><\/p>\n

Ladle soup into bowls and pass the cheese.\u00a0 Buon Appetito!<\/em><\/p>\n
